There's nothing quite like pulling a perfect apple pie from the oven on a wet November evening. My tips for the best apple pie:
- Slice your apples very thinly.
- Use lots of cinnamon and a little nutmeg.
- Make your crust from scratch--and by hand! No food processors. You will get the most tender crust this way.
- Don't forget to dot the filling with butter before putting on the top crust.
- Start baking at 425F for 15 minutes, then lower oven temp to 375F and bake until bubbling.
And for optimum enjoyment, see if you can cook up a rainy November day...

Oh, you made my mouth water. Added to the "to do" list for tomorrow (our day is ending here): make apple pie.
The weather forecast is calling for a chilly, rainy day tomorrow to boot!

I do #1-3. I don't do #4, but I don't use a top crust I use some Streusel. Next time I make an apple pie I'll have to try #5. I'd like to add an item to your list, if I may:
#6 Use good firm, tart apples(I use Granny Smith)
